Bit of a mishmash post for you today!
Last weekend was my brother in law's wedding and I was very lucky to be gifted with one of the table flower arrangements. As I am a flower addict and as I always gaze at wedding flowers wishing i could take them home with me I was thrilled! And if that wasn't wonderful enough my mother in law gave me hers because she was off to Melbourne the next day.
The wedding was very beautiful and lots of fun as they had a vintage photo booth for us to play with.
It was great :)
At home this month I've managed to steal a few hours here and there for painting and am getting more detail on my balloon painting
B's been patiently waiting on me to send the recipe for my spicy ginger biscuits so finally here it is.
It is inspired by a Caribbean recipe and is gluten and dairy free.
Spicy Ginger Biscuits
Pre-heat oven to 190 degrees.
In an electric mixer combine
200g almond meal
1 cup castor sugar
1/4 cup rice flour
2 large egg whites
3 tbs glace` ginger roughly chopped
(crystallized ginger is fine if you can't find glace`)
1/2 tsp ground ginger
1/2 tsp groundchilli
3/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp all spice
1/4 tsp white pepper
1/4 tsp cloves
Mix on medium speed for 2 minutes. If it seems too wet just add a little more almond meal.
Place about 1 1/2 teaspoons of mixture onto lined tray and squash down. Add some thinly sliced glace` ginger on top of each bickie. Makes about 18 or so.
I particularly like them with a glass of really cold soy milk.
